Terrific Blog. Gonna make the poached eggs for sure. We have a small hobby farm north of Cobourg, Ontario. Every summer we get a rooster and 4 hens from a local farmer. The fresh eggs are great. My summer ritual this year was to make fresh herb butter with herbs from the garden. Spread the butter on fresh sourdough bread and top with fresh poached eggs. I would sit on our back deck wth a great coffee and enjoy the country morning. Your recipie is a little more urban and suited to my weekends in the city. I my sunday morning planned…your eggs with my Nespresso Latte.

Herb butter is always a good fall back for those extra herbs that are going unused. I hope you enjoy the eggs on Sunday!
